Nisem ravno ljubiteljica piškotov, ampak ko zagledam svetlorjavo embalažo z jabolčnim nadevom polnjenih piškotkov Mulino Bianco, mi srce kar poskoči od veselja. Zelo si želim, da bi jih znala speči sama, zato sem pobrskala po receptih in našla tega:
Apple-Filled Biscuit Cookies
Ingredients: 250
grams flour (1 ¾ cups flour) - 110 grams sugar - 4 ounces (125 grams)
butter, room temperature -1 egg - 1 egg yolk - 1/2 tsp finely-grated
lemon zest.
Filling: 2 apples (medium sized) -1/4 cup sugar - 1 cup water - 2 tsp lemon juice (freshly squeezed) - cinammon.
Direction: Using
an electric mixer on medium speed, beat the butter into the flour
mixture until incorporated. Beat in the eggs, lemon zest and sugar until
incorporated (about 1 minutes). Do not over mix the dough. Wrap in
plastic wrap and refrigerate until firm, at least two hours. For
filling: peel and cut the apples into small pieces adn cook them with
one glass of water and lemon juice until tender. Add sugar and then
continue to cook until the consistency is thick. Preheat oven to 375° F.
Roll out the dough thinly and cut out into circle using 2” or 2 ½”
diameters round cookie cutter. Place a level teaspoonful of filling in
the center of each square. Moisten edges with water and cover the top
with another piece of pastry. Seal edge gently using fingers. Place it
in a lined baking pan and bake in a pre-heated 375 degree F oven for 15
minutes or until golden brown. Remove to wire racks to cool. Dust with
confectioners' sugar. Yield: 12-15 cookies.
